Add the client when the engagement ends and send the request by text or email, or schedule it for a few days later. The message is your firm's name, a thank-you and the link to your Google review page. No incentive is offered, because none may be, and the client decides what to write.
A client whose matter is sensitive, or who asked not to be contacted, is flagged do-not-contact on their record and no request can be created or sent for them afterwards. STOP on a text removes the number automatically. The flag is enforced when the request is queued and again before it leaves.
